This is a great idea for a weekday “meal in a hurry”: it’s really quick to make, inexpensive, nutritious, and it’s really good too.

Steak and Onion Stir Fry
Ingredients
- 1/2 pound round steak
- 2 small unpeeled potatoes
- 2 small onions
- 1 clove garlic
- 1/4 pound fresh mushrooms
- 1 cup frozen peas
- 1 cup fresh or frozen green beans
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 teaspoon thyme
- Salt and pepper
Instructions
- Slice meat into bite size strips. Scrub potatoes and cut into 1/2 inch wedges. Slice onions and separate into rings. Mince garlic. Thickly slice mushrooms. Measure out the peas. Slice fresh beans or measure out frozen beans.
- In a large skillet or wok heat oil and stir fry the meat for about 2 minutes. Add the butter, heat to melt it, and then add the potatoes. Stir fry until they start to brown, about 4 minutes.
- Add the remaining ingredients and stir fry until the vegetables are heated through and the meat is done, about 4 more minutes. Makes 2 to 4 servings.
