I make as much as I can, in order to be able to control the ingredients that are normally used in processed foods. When I got my Vitamix I decided to try my hand at emulsified salad dressing. This is kind of a cross between Mayonnaise and a Miracle Whip dressing. I use it anywhere I would use one of those: potato salad, devilled eggs, tuna salad, on a sandwich.
- 2 eggs large
- 3 tbsp honey
- 1/4 cup apple cider vinegar
- 1 tsp salt
- 1/2 tsp dry mustard
- 1/4 tsp paprika
- 1 cup avocado oil
- Add all ingredients except oil to Vitamix (I think this recipe would work with any blender)
- Turn to Variable 1, and increase speed to Variable 10. Blend for about 30 seconds
- Reduce speed to Variable 8. Remove the cap from the blender lid and slowly pour the oil in a steady stream until completely used and mixture is emulsified and thickened.
