You mix all the batter ingredients up in one bowl – hence they are “quick”. And they are also very good – a nice crisp oatmeal cookie with the tasty addition of coconut.

Quick Coconut Oatmeal Cookies

Ingredients
  

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup oatmeal
  • 1 cup coconut

Instructions
 

  • Mix flour, baking powder, baking soda and salt in a large mixing bowl.
  • Add sugars, butter and egg. Mix until smooth. Stir in vanilla. Fold in oatmeal and coconut.
  • Shape into balls and place 2 inches apart on ungreased cookie sheet. Bake at 350 degrees F. for 12 to 15 minutes.
