You can’t beat potatoes roasted in the pan with roast beef. Still, if you are not having roast beef, these are the next best thing. This is a basic recipe which you can vary by using other herbs or spices in place of the paprika (try seasoned salt for spicy fries, or 1 teaspoon of rosemary or Italian seasoning).

Oven Roasted Potatoes

Cut your potatoes into chunks, wedges or fries.

Ingredients
  

  • 2 pounds baking potatoes about 4 potatoes
  • 2 tablespoons olive oil or melted butter
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Peel potatoes and cut into large chunks, wedges or fries. Toss with oil, paprika, salt and pepper.
  • Spread out in a single layer on a greased baking sheet. Bake at 400 degrees F. for 45 to 60 minutes, until golden and tender. Makes 4 servings.
