Unbaked chocolate cookies is an old time favorite. I am trying to eliminate refined sugar from my diet, so I came up with this version that uses maple syrup. Make them gluten-free by using certified gluten-free rolled oats.
No-Bake Chocolate Peanut Butter Drops
- 1/2 cup butter
- 3/4 cup maple syrup
- 1/2 cup peanut butter
- 1/2 cup cocoa
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 3 cups quick cooking rolled oats
- In a large saucepan, combine butter, maple syrup, peanut butter, cocoa and salt. Place over medium heat. Cook and stir until mixture comes to a full rolling boil. Boil for 90 seconds.
- Remove from heat and stir in vanilla.
- Stir in rolled oats.
- Drop by spoonfuls onto wax or parchment paper lined baking sheet.
- Refrigerate until firm.
- Store in refrigerator.
