Unbaked chocolate cookies is an old time favorite. I am trying to eliminate refined sugar from my diet, so I came up with this version that uses maple syrup. Make them gluten-free by using certified gluten-free rolled oats.

No-Bake Chocolate Peanut Butter Drops

Servings 20 -25 cookies

Ingredients
  

  • 1/2 cup butter
  • 3/4 cup maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 cups quick cooking rolled oats

Instructions
 

  • In a large saucepan, combine butter, maple syrup, peanut butter, cocoa and salt. Place over medium heat. Cook and stir until mixture comes to a full rolling boil. Boil for 90 seconds.
  • Remove from heat and stir in vanilla.
  • Stir in rolled oats.
  • Drop by spoonfuls onto wax or parchment paper lined baking sheet.
  • Refrigerate until firm.
  • Store in refrigerator.
