Ingredients
  

  • 1 cup plus 2 tablespoons flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • Grated rind of 1 lemon
  • 1/3 cup butter
  • 1 egg beaten
  • 1/2 cup raspberry jam

Instructions
 

  • Combine flour, sugar, baking powder, salt and lemon rind in food processor bowl. Add butter and process until mixture resembles coarse meal. Add egg and process briefly to combine.
  • Spread 2/3 of the mixture in a greased 8 inch square baking pan. Pat down firmly. Spread jam over top, and sprinkle remaining batter over jam.
  • Bake for 25 minutes at 350 degrees F. until well browned.
