Jam is a classic ingredient in squares – this is a simple jam square. You can vary it by using different jams for the filling.
- 1 cup plus 2 tablespoons flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- Grated rind of 1 lemon
- 1/3 cup butter
- 1 egg beaten
- 1/2 cup raspberry jam
- Combine flour, sugar, baking powder, salt and lemon rind in food processor bowl. Add butter and process until mixture resembles coarse meal. Add egg and process briefly to combine.
- Spread 2/3 of the mixture in a greased 8 inch square baking pan. Pat down firmly. Spread jam over top, and sprinkle remaining batter over jam.
- Bake for 25 minutes at 350 degrees F. until well browned.
