Cranberry and orange just go so well together.

Cranberry Orange Muffins
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup sugar
- 1 tablespoon grated orange rind
- 2/3 cup orange juice
- 1/2 cup melted butter or margarine
- 2 eggs lightly beaten
- 1 1/2 cups fresh or frozen cranberries
Instructions
- In large mixing bowl, combine flour, baking powder, baking soda, salt and sugar. Stir in grated orange peel.
- In another bowl, combine juice, melted butter, and eggs. Make a well in the dry ingredients, and fold in the wet ingredients until just combined.
- Fold in cranberries. Pour batter into greased or paper lined muffin cups. Bake at 350 degrees F for 20-25 minutes.
