Cranberry Orange Muffins

Ingredients
  

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon grated orange rind
  • 2/3 cup orange juice
  • 1/2 cup melted butter or margarine
  • 2 eggs lightly beaten
  • 1 1/2 cups fresh or frozen cranberries

Instructions
 

  • In large mixing bowl, combine flour, baking powder, baking soda, salt and sugar. Stir in grated orange peel.
  • In another bowl, combine juice, melted butter, and eggs. Make a well in the dry ingredients, and fold in the wet ingredients until just combined.
  • Fold in cranberries. Pour batter into greased or paper lined muffin cups. Bake at 350 degrees F for 20-25 minutes.
