Baked Pasta

September 1999 – I love pasta in all shapes and sizes. Here we are featuring baked casseroles made with pasta. Lasagna is my all time favorite baked pasta, but there are lots of other great baked pastas too.

Pasta casseroles are a great idea for casual entertaining. Any of these recipes you can prepare early in the day or even the night before. Prepare up to the point of baking. Instead of baking, cover your casserole and put it in the refrigerator. Remove from the refrigerator for about half an hour before baking, and add a few minutes baking time to what is indicated in the recipe. Easy and no fuss!

It is also handy to have a casserole or two on hand in the freezer – prepare as above, cool and freeze. How about doubling the recipe for the casserole you are making now – then bake one and freeze the other one for later. You get an extra meal with hardly any more effort.
